Congratulations on your first week of being a registered nurse!
What I ate this week (and spent)…. I think I spent about 50.00 that’s including a
milkshake on Tuesday, and coffee on Sunday. I got treated to 2 meals out, on
Sunday and last evening.
I had green/yellow beans with pork.
I made corned beef hash ( and ate leftovers for breakfast).
I made a ramen noodles with micro green, snap peas and an egg.
I’m make a salad today with grilled peaches, roasted beets and blueberries.
It dawned on me last evening, when reading recipes/watching cooking shows, they
use gas/propane tops, which speeds the process up. I’ve got to adjust my cooking
time as I had been using an electric stove top, but now with the propane, its way
faster!

Congrats on getting through week 1!!
Dinner’s this week included:
1. Bulgogi, rice and zucchini
2. Chicken curry, (or chickpea curry) rice and zucchini
3. Ground turkey salad
4. Pizza and/or salad-> I hit the easy button and bought both at Sam’s Club for
approx. $13. It easily served 4 adults and was a cheaper alternative than buying
one meal at many fast food restaurants.
5. Cookout fare (burgers, chicken, salads, fruit)
6. Leftover bulgogi or chicken curry on salad
7. Not sure about tonight… maybe wraps or omelets?

We had a busy week, and we were light on vegetables and side dishes!
Monday: Raided the freezer and pantry found lots of ingredients for chicken noodle
soup. Seasonally inappropriate, but very good.
Tuesday: Mr. B made pasta with tomato sauce.
Wednesday: I was feeling a bit yucky after my iron infusion so I rubbed some spices
on some boneless, skinless chicken breasts and roasted them along with frozen
fries.
Thursday: I was on my own for dinner after a big lunch so I tried some store-brand
frozen ravioli and they were not good. Longos (Curato) for my Canadian friends.
Wouldn’t buy again.
Friday: breaded tilapia, green beans, challah, ice cream for dessert.
Happy weekend! I’m working Sunday so please enjoy it extra hard for me 🙂
