SEAFOOD ART PRINTING
Gyotaku is a ancient Japanese method that translates as Gyo ”fish” and Taku “impression / print”. This ritual was used by fisherman to record prized catches, and chef Ben Devlin reimagines it in special art & dining experiences.
Each print is handmade in Pipit’s kitchen studio using local, sustainable seafood that is also cooked on Pipit’s seasonal menus. It uniquely connects food, art and Tweed Coast landscapes like nowhere else. Pipit is the only Australian modern restaurant you can experience this in.

ARTIST STATEMENT
Ben’s artwork (and Pipit’s food) is grounded in respecting whole ingredients and connecting to local coastal landscapes.
The Gyotaku prints explores:
connection to recipes (each artwork is connected to a menu dish)
biology (features, textures, how fish swim)
locality of produce (each work is noted by supplier, latitude and longitude)
seasonality of produce (prints only can happen when the ingredient is available)
sustainable seafood (we only buy based on MCS’ Good Fish guide)
